Zucchini Pizzas

Zucchini pizzas
Time: 20 minutes
Level: Easy
Servings: 2-4
Cost: under $3

Ingredients:
Zucchini (get 3 for $2 at Aldi)
Pizza sauce
Shredded cheese (i used feta in mine)

Steps:
1. Slice zucchini into long, flat, thick slices. You should get 3-5 slices from each, depending on how big the zucchini is.
2. Top with pizza sauce and cheese (add any other toppings you want)
3. Bake for 15-20 minutes at 450 degrees.

Buffalo Cauliflower Bites

Time: 15-20min
Effort: Easy
Servings: 2-4
Cost: under $3

Ingredients:
Bag of frozen cauliflower
Buffalo wing sauce
Grated parmesan

Steps:

1. Cook cauliflower as directed on bag and drain any excess water
2. Add buffalo sauce as desired
3. Lay out on baking sheet
4. Top with parmesan cheese
5. Cook for 10 minutes at 425 degrees or until cheese is melted and cauliflower is crispy

Sauteed Onions, Mushrooms, and Sausage

Time: 10-15 minutes
Level: Easy
Servings: 2
Cost: $3

Ingredients:
Jar of mushrooms (Dollar tree)
Sausage, pack of 2, sliced (Dollar Tree)
1 onion, sliced
Worcheshire sauce
1 tbsp of oil

Steps:
1. Slice onions and sausage.
2. Take 2 skillets. Put half a tablespoon on oil in each skillet
3. Put onions in one and sausage in another.
4. Add approximately a tablespoon of Worcheshire sauce to onions.
5. Add mushrooms to onions.
6. Sautee both mixtures until each are lightlu brown. Keep stirring and don't let either stick or burn.
7. Top onions and mushrooms with sausage and enjoy!

Baked Parmesan Zucchini

Time: 18 minutes
Level: Easy
Servings: 2
Cost: $2

Ingredients:
1 zucchini, sliced (buy a pack of 4 at Aldi for $1.67)
Olive oil (or any oil) ($1 at Dollar Tree)
Grated parmesan cheese ($1 at Dollar Tree)
Italian seasoning  (optional) ($1)

Steps:
1) Slice zucchini and lay on baking sheet
2) Drizzle with oil
3) Lightly season
4) Top with parmesan cheese (to your liking)
5) Bake at 450 degrees for 15 minutes

BBQ Pizza

Time: 10 minutes
Level: Easy
Cost: $3
Servings: 8 slices

Ingredients:

Pizza crust ($1 at Dollar Tree)
Pizza sauce ($1 at Dollar Tree)
1/4 onion, chopped
1/4 green pepper, chopped
Drizzle of barbecue sauce
Shredded cheese

Plus any additional toppings of your choice (I added minced garlic too!)

Steps:
1. Add all toppings to crust
2. Cook in oven for 8-10 minutes at 425 degrees
That's it!!!

Most ingredients are things you probably already have at home!! And you can include or take away any ingredients of your choice!

Rice and Peaches

Time: 17 minutes
Cost: Under $3
Level: Easy
Servings: 2-3 people

Ingredients:
1 onion, chopped ($2.96 for a bag)
3 green onions, chopped ($1.18 at Walmart)
1 can of peach slices, drained thoroughly ($0.50)
1 cup of rice ($1/ bag)
Soy sauce ($1)
Teriyaki sauce ($1)
Minced garlic ($1 for jar at Dollar Tree)
Parsley flakes and season salt ($1 each at Dollar Tree)

Steps:
1. Follow instructions to cook rice in microwave
2. Meanwhile, chop onion and green onions and put in pan with a little soy sauce and garlic. Sautee until brown.
3. Once rice is cooked, pour into a pan and add soy sauce and teriyaki sauce until covered. Add a little garlic and season salt. Heat on stove.
4. Add onion mixture. Keep stirring.
5. While rice is heating, put peaches and a tiny bit of teriyaki sauce in pan and sautee until peach edges are brown and peaches are warm throughout.
6. Top rice with peaches

(You can also cook chicken or beef to add to mixture)

Experiment and add other seasons, sauces or veggies that you already have!

Stuffed Sweet Potatoes

Time: 10-12 minutes
Cost: Under $4
Level: Easy
Servings: 2-3 people

Ingredients:
2 microwavable sweet potatoes ($0.88 each)
1/4 lb Ground beef ($3.99/lb)
Shredded cheddar cheese ($1.98 a bag, make sure to buy from grocery store; dollar tree cheese doesn't melt)

Steps:
1. Microwave potatoes for 8 minutes  (times vary)
2. While potatoes are cooking, brown the ground beef and drain off grease.
3. Cut open potatoes and loosen/mash inside  (keep inside skin).
4. Cover potatoes with ground beef
5. Top with cheese
6. Put in microwave until cheese is melted
7. Enjoy!

Use cheese and beef for other recipes!
